Splitpea Soup

1 cup green or yellow split peas

4 cups water or vegetable broth

½ cup chopped onion

¼ cup chopped celery

2 teaspoons sea salt

2 cloves garlic

¼ teaspoon cayenne pepper (optional)

2 cups nut milk or cream

Combine peas, water, onion, garlic, celery, salt and pepper. Cook until peas are soft about 1 hour. Pour into blender and puree until smooth. Return to pot. Add milk or cream slowly and stir until blended. Cook until thoroughly heated on low heat for 10 minutes. Serve hot.
