Tasty Tacos

For 6 tacos:

Toast wholegrain taco shells in the oven until crisp.

Mix in a bowl

2 TBS chopped black olives

4 TBS grated vegan (Miyoko's Farmhouse) cheddar or jack cheese

1 Tomato, chopped

½ Red onion, chopped

Filling

Mix 1 cube of tofu with 2 to 3 tablespoons of meatless crumbles, tofu burger, or falafel mix. Saute in 1 tablespoon of oil in a skillet until brown.

Spoon 1 tablespoon of filling for each taco. Broil brieftly to melt, and top with some shredded lettuce or alfalfa sprouts, and a drizzle of salsa.
