Broccoli Quiche

  • 2 wholegrain pie shells

  • 16 oz chopped broccoli

  • 8 oz plain (nondairy) yogurt

  • 6 oz veggie cheese (Miyoko's Farmhouse)

  • 4 oz seasoned breadcrumbs

Season to taste

Cook broccoli until tender. Mash in mixing bowl or food processor. Add other ingredients and 4 ounces of veggie cheese. Mix thoroughly. Divide mix ingredients into equal halves. Place in pie shells. Smooth top and sprinkle remaining cheese. Bank in the oven at 350 degrees for 30 minutes.
