Cashew Roast

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 3 stalks celery, finely chopped

  • 3 cups finely ground toasted cashews

  • 2 cups vegetarian burgers (Morningstar)

  • 1 cup nut milk

  • 2 tablespoons cornstarch

  • 1 tablespoon vegan beef style seasoning

  • 1 tablespoon Braggs liquid aminos

  • ½ teaspoon sea salt

  • ½ cup vegan mayonnaise 

In medium skillet, heat the oil. Sauté onions and celery until onion translucent and celery tender. Put in a large mixing bowl. Add remaining ingredients and mix well. Spray medium casserole dish with cooking spray.
