Vegan Caesar Salad

1 package Romaine lettuce 

Dressing 

2 cups water 

1 (15-ounce) can cannellini beans, drained and rinsed 

3 cloves garlic 3/4 cup lemon juice

4 tablespoons low sodium miso 

6 tablespoons nutritional yeast 

1 tablespoon rice or apple cider vinegar 

1/2 teaspoon xanthan gum (for thickening)

Place all ingredients for the dressing in a blender and blend until smooth. Add xanthan gum and blend again briefly. Use whole leaves of Romaine lettuce. Toss the lettuce and dressing and serve.
